Job description
At the Department of Safety and Quality of Meat in Kulmbach the Federal Office for Agriculture and Food (BLE) founded joint project aims at the investigation of the consequences of different stunning gas combinations on carcass quality, meat quality, metabolome and the stunning effectiveness in pigs.
Within the scope of this work, the influence of the respective gas mixtures on metabolism of the animals will be analysed using non-targeted and targeted metabolite profiling techniques such as GC x GC-MS and LC-MS/MS. The stunnig experiments and sampling of blood and muscle tissue will be carried out with an interdisciplinary team of veterinarians, biologists, butchers and technical staff at the slaughterhouse.
Your profile
Mandatory requirements:
- a completed master’s degree or a comparable degree in biology, biochemistry, agricultural sciences or a comparable degree in the field of life sciences
- basic knowledge about mammalian physiology
- hands-on experience with application of analytical methods
- expericene in the evaluation of analytical data with statistical methods
- good English skills, both written and spoken
Preferable are:
- experience in working with biochemical methods (e.g. chromatography or mass spectrometry)
- experience in writing project reports and scientific publications
- experience in the safe handling of chemicals and responsible behavior in laboratories.
Aside from independent and responsible working methods, as well as the ability for inter and intra disciplinary collaboration, a high degree of motivation, personal commitment, team spirit and a willingness to cooperate with colleagues and other institutions are also required.
Our offer
Subject to confirmation by the research funding body we are offering at the earliest possible date a part-time position at the Kulmbach site of the Max Rubner Institute for a limited period until April 30th, 2024. A three-year project duration is aimed for, taking into account the budget situation. The weekly working hours are presently 25,35 hours. The employment contract is subject to the regulations of the civil service collective wage agreement (TVöD-Bund). Payment of remuneration will be made according to pay grade 13 TVöD if personal and tariff requirements are fulfilled.

Job description
The Department of Safety and Quality of Meat in Kulmbach is interested in the nitrogen balance and reactivity of nitrite and nitrate in cured meat products. Within the scope of this work, initial experiments with isotope-labelled sodium nitrite will be performed in cooperation with the Department of Safety and Quality of Milk and Fish at the location Kiel. This should clarify the open question concerning the quantitative balance and the reactivity of nitrite in different fractions (liquid phase, fat and in particular different protein fractions).
Here, isotope ratio mass spectrometry (IRMS) is to be used. Based on this, in the further course of the research work, nitrite-induced protein modifications of meat proteins will be investigated by the mass spectrometric analysis of tryptic peptides applying a coupling of high performance liquid chromatography and high resolution tandem mass spectrometry (HPLC-QToF-MS/MS).
Your profile
Mandatory requirements:
- a completed master´s degree or a comparable degree in the fields of chemistry, biochemistry or related studies
- experience in the preparation of international scientific publications in peer reviewed journals
- very good knowledge and practical experience in the field of bottom-up proteomics
- ability to work independently and the readiness for interdisciplinary cooperation
- competent handling of MS-Office applications (Word, Excel, PowerPoint)
- very good English skills written and spoken
Preferable are:
- an exceptional qualification for scientific working, normally evidenced by a completed doctorate
- readiness to work independently on a complex issue
- initial experience in staff leadership
- very good conceptional and communicative skills
- good verbal and written communication skills in German
- good knowledge and experience in experimental design and in statistical analysis of scientific experiments
