The University now seeks to appoint a Post-doctoral Research Fellow in Food Science and Nutrition within the School of Applied Sciences. The School of Applied Sciences delivers programmes and applied research in the areas of food and drink, the built and natural environment, forensic and biomedical sciences, mental health nursing, counselling, psychology, and sport and exercise.
There has been significant growth in the School’s research output in recent years with outstanding results in the last REF research intensity for modern Universities in Scotland. In this role you will contribute to our quest for a healthier and more sustainable future.
You will be part of a project aiming to develop an ‘English breakfast’ black tea, affordable and widely consumed in the UK, enriched with bioactive seaweed compounds. Seaweed offers a sustainable solution for the food and drink sector, producing nutrient-dense seaweed suitable for consumption, without need for fresh water and fertiliser, while contributing towards carbon capture and ocean health.
This project results from our collaboration with Oshun labs, an innovation lab specialised in developing sustainable solutions for women’s health, and is funded by Innovate UK (UKRI). It will consist in two parts: (i) the formulation of the seaweed based tea, optimizing nutritional content, nutrient bioavailability and acceptability, (ii) a randomized controlled trial to examine the effect of the newly developed seaweed tea on cardiovascular health in post-menopausal women.
You will be required to develop protocols, optimise methods, analyse food samples and blood samples using state of the art chromatography techniques (HRMS, LCMSMS), manage and run consumer and clinical trials, analyse data and communicate findings. You will work closely with your team to ensure the research is completed effectively and within the time constraints.
