About BRIGHT Mission 2: Microbial Foods

The PhD project is part of BRIGHT Mission 2: Microbial Foods, an interdisciplinary research programme designed to develop an AI-powered framework for the rational design of microbial foods.

The programme aims to develop foods that meet four important targets: consumer acceptance, health, sustainability, and scalability. The initial research phase focuses on two fungal chassis, Aspergillus and Yarrowia, with more than 500 prototypes being characterized through multi-omics, sensory analysis, life-cycle assessment, and safety testing.

Predictive models for flavor, texture, nutrition, and process scale-up will be developed through iterative active learning. The broader scientific programme covers strain engineering, adaptive laboratory evolution, fermentation, sensory and consumer research, and pre-clinical and clinical assessment of safety, bioavailability, and cardiometabolic health. This PhD position will contribute specifically to the nutritional optimization of these microbial food systems.

PhD Research Project

As a PhD Student in Molecular Nutrition and Strain Engineering, you will work with computational biologists, microbial engineers, and food scientists to identify and improve nutritional limitations in Aspergillus and Yarrowia food prototypes.

The project will focus on nutritional characteristics such as protein bioavailability, essential amino acids, protein digestibility, and selected vitamins. Through targeted strain engineering, you will investigate ways to improve these characteristics without negatively affecting other important properties of the food.

The work will combine experimental molecular biology with nutritional analysis and collaboration across different research areas. Results from protein chemistry and in vitro digestion studies will help guide further strain development. The research will also contribute to predictive models that connect microbial strain design and processing conditions with nutritional outcomes.

Main Responsibilities

As part of the PhD project, your responsibilities will include:

  • Identifying rate-limiting nutritional characteristics of the Aspergillus and Yarrowia chassis.
  • Using data from the wider BRIGHT characterization programme to design appropriate strain-engineering strategies.
  • Engineering Aspergillus and/or Yarrowia strains to improve selected nutritional characteristics.
  • Working to improve essential amino acids, vitamins, and protein digestibility.
  • Ensuring that nutritional improvements do not compromise taste, texture, or processing performance.
  • Coordinating with the protein chemistry and in vitro digestion research workstream.
  • Iterating strain designs based on experimental measurements and research outcomes.
  • Contributing to predictive models linking microbial strain and process design with nutritional performance.

Eligibility and Academic Requirements

Applicants should have a two-year Master’s degree equivalent to 120 ECTS credits in molecular biology, biotechnology, microbiology, nutrition science, or a closely related field. Applicants with another relevant qualification may also be considered if their academic background is equivalent to a two-year Master’s degree.

Strong organizational and project management skills are expected. Candidates should also enjoy developing new methods and working on exploratory scientific problems. Fluency in both written and spoken English is required. Applicants should also have literacy in common IT systems and AI.

Preferred Skills and Research Experience

Experience with molecular biology techniques is highly relevant to this PhD position.
